Canning Tomato Sauce


I canned my own tomato sauce!  I'm not going to lie, it was a lot of work!  I made 7 pint jars using this recipe.

I started with this pile of tomatoes:


Then I blanched them so that I could peel the skins off easily.


After peeling the skins I had to squeeze all the juice/seeds out.  This was the most time consuming part.  Here are a bunch of them in my pot:


I cooked them until they had reduced by about half.  It still seemed a bit chunky, so I decided to puree it in a blender.


Here it is in the jars after adding 1 Tbsp of lemon juice.  I used a water bath canner to process them.


And finished!  I plan on using it for chili this fall and winter!  We also did a few cans of diced tomatoes this week and salsa!
